178 Degrees is proud to present a series of recipes created by James Cornwall, most recently Executive Chef of Hong Kong's famed Seafood Room.

James has just launched his own venture, Home Pop due to hit Melbourne next month, but found some time to share his culinary story with us.

Growing up in the small rural town of Ashburton, New Zealand gave him an early appreciation of responsible resource management, an experience that lies at the core of his approach to cuisine to this day.

After heading the legendary seafood restaurant J Sheekey in London and his stint at the glamorous Seafood Room, James returns to the Antipodes on the next stop of his culinary journey.

He's promised the change of seasons and scenery will re-invigorate his love for seafood, which will be brought to life in his new recipes.

We can't say too much for now, but the first one will involve green-lipped mussels from New Zealand. Check back soon and all will be revealed.
