Kiwi farmers are blessed with an abundance of clean water and a temperate climate, so let their herds graze in fields their whole lives, without having to rely on grain-based feed. Wagyu beef is renowned for its marbling, the extent of which is measured by the marbling score. Choose a score of M6 (roughly equivalent to A5 in the Japanese system) if you like a well-marbled steak. If you prefer a leaner cut, M3-5 is a better choice, as it indicates a level of intra-muscular fat of around 3-5%.
