Snapper
Snapper are copper-pink on top with a silver-white underside and small blue dots on their sides, though their colour can vary slightly depending on their habitat. Deep pink snapper are found nearer the shore, whereas those found near reefs and weed tend to be a red bronze.
Snapper has semi-firm flesh with a low oil content and coarse flakes, and is excellent for most cooking methods including whole and smoking. Try using it in our healthy baked fish and chips recipe.

Snapper is managed under a quota set by the QMS, which is New Zealand's national fisheries management system. The commercial quota for the 2021/2022 year has been set at 6,507 tonnes.
