is a prized species around the world, especially by the Japanese. It is suited to most cooking methods such as grilling, baking, pan-frying and smoking.
Raw kingfish fillets have firm dark pink flesh, which lightens on cooking. Kingfish has a slightly stronger flavour than other fish, so is also fantastic for braising and in curries.
